If you want to see professional Flamenco dancers, you should look for the so-called "tablaos", which are usually visited by many tourists.
A very good tablao is Los Gallos, located on Plaza de Santa Cruz no.11. Some friends of mine from England went there last week and told me they considered it the best one around. Unfortunately, it is quite expensive: cover - 27 euros, which includes one drink, but I think it worths the money. They have shows daily from 8pm and 10pm.
